SO Good Roast


So I said I’d share recipes when I find good ones. This roast was so delicious that the whole family loved it and (this has never happened before) there wasn’t enough… all the kids wanted more. Since I’m on the Trim Healthy Mama plan, I modified the original recipe to meet my dietary needs, and made my own “cream of” soup mix, my own onion soup mix, my own bouillon powder mix, and used my own timing of the crockpot.

I made my own Bouillon Powder Mix: https://www.101cookbooks.com/homemade-bouillon-powder/

I used a chuck roast, put it in the crockpot, and covered it generously with Himalayan salt and fresh cracked pepper. I put the dry onion soup mix on top of it and spread it evenly over the roast. I mixed up some homemade “cream of anything base” soup dry mix from the cookbook “Pantry on the Homestead” by Katherine Umbarger. I used coconut dry milk powder instead of just regular milk powder and left the cornstarch out all together.

  • 1 c Coconut Dry Milk Powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried parley
  • 1/4 tsp black pepper

To make it beef flavored, I mixed the whole seasoning mix above with 1/2 cup of beef bone stock. Mixed it well and poured it over the roast.

I cooked it on high for 4.5 hours in the crockpot. It was not fall apart yet, so we sliced it and it was delicious. I added Yukon Gold Potatoes and Carrots about 2 hours before serving and that may have been too long. I think next time I will put them in 1 to 1.5 hours before serving.
