Easter!


For those who don’t know, I gave up all social media for Lent. At first, it was easy… then really really difficult. But I got so much done and spent so much time with Jesus. Reading, praying, meditating on His Word. We had some incredible conversations. I redownloaded TikTok and Facebook but honestly, I feel funny being on them. Like, they don’t serve me anymore. My anxiety was down by not knowing what is going on in the world… anything crazy Jason would tell me, but for the most part, I was clueless. I took the time and really poured myself into my kids and my cooking. It was so nice.

Yesterday I spent time on social media and every single TikTok I watched, my spirit told me to start writing a book. I’ve heard this from God before but never has it seemed so urgent. Talking with God I had all of my excuses: I have no idea what to write (He said, just start… just put words on paper); I’m terrified to write a book (I am with you and going before you); and so many more. BUT I’ve been obedient … more so over Lent. So, I started a book. As of right now, I’m just putting words on paper. I started with my testimony. I’ve only written a small amount, like maybe 4 paragraphs, but it’s a start.

OK! Let’s talk about EASTER!!! I hosted the Powell Easter on Saturday and it was such a success! I served beef tenderloin (that Jason cooked on the Blackstone and smoker), roasted carrots, garlic mashed potatoes, green beans, rolls, Mercades made Mac-n-cheese, and cake for dessert. It was perfect. The food was just enough… not too much left over, but plenty for everyone to have their fill. We ate, we visited, and it felt SO good in my soul to spend time with beloved family.

On Sunday, we went to my mom’s for Easter dinner. I had a major part in the menu planning and somehow it was still off plan LOL. I brought drinks and roasted carrots. I tried a different method and it wasn’t as good. We had sugar ham, broccoli casserole, homemade bread, pigs in a blanket, green beans, Mac-n-cheese, roasted carrots, mashed potatoes, and I’m sure I’m forgetting some stuff. It was a feast for sure. And equally soul filling! As I’m growing older (and with the chemo and cancer…) I’m really enjoying visiting with my parents.

Here’s my SUPER easy carrot recipe: I use long organic carrots, wash and cut into large chunks. Add coconut oil (or olive, avocado, whatever healthy oil you choose) and use your hands to coat all of the carrots. Add 3/4 stick of butter cut into chunks and randomly place on carrots. Dash of salt. Cover with aluminum foil… place in oven at 350 for about an hour… You can go longer, but not shorter unless your carrots are really small.

I skipped the oil part with my mom’s carrots and they definitely were not as good. The oil kinda crisps them just a tad. And you don’t need much of it.
